[Thunder3 Quad Mini] Can I use a dual mSATA SSD to 2.5” SATA RAID adapter?

No, the Thunder3 Quad MIni does not support dual mSATA SSD to 2.5” SATA RAID adapters. It only supports a single drive per slot and even if the RAID adapter is set to create one volume (e.g. RAID 0 or RAID 1), it is still not recognized correctly.
